Recipe for Delicious Clean Eating Vegan Chocolate Cookies / Biscuits

I love the vegan lifestyle and the idea behind 100% vegan living.  The vegan lifestyle is so clean and healthy.  I love gluten free and dairy free recipes, and lots of my recipes are suitable for vegans.  However, I am not vegan, because I just could not give up chicken, eggs or milk in my coffee.  But other than that, I am 100% vegan! (Just kidding)!!

So because of all this, I love to try and cater for my vegan friends, and in fact, I'm secretly jealous of vegans!  I therefore developed and came up with this delicious vegan chocolate biscuit recipe.  This recipe is vegan if you replace the 1 tablespoon of honey for an extra tbsps of maple syrup or sweetner.

1 cup (100g) of almond flour (or ground almonds), 2 tbsps of maple syrup (or if you're not vegan, you could add 1 tbsp of maple syrup and 1 tbsp of honey, like I did in the video), 1 tbsp of coconut oil, 80-100g of 99% cocoa (dark chocolate), 1 teaspoon of cinnamon, 1 teaspoon of nutmeg, 1 teaspoon of bicarbonate of soda, fresh vanilla or 1 teaspoon of vanilla extract.

Method to the madness:
Basically, all you need to do is add all the dry ingredients together and mix them in a bowl. Then, gently melt the bar of dark chocolate (preferably 99% cacau) in a saucepan.

Add all of the wet ingredients (the maple syrup, the honey, the coconut oil and the melted dark chocolate) to the mixture of dry ingredients in your bowl.

Mix them together thoroughly.  Using a spoon and your fingers, form cookie shaped piles, making them as round possible, and nice and thick, placing them on wax paper on a baking tray.

Bake them in a preheated oven at 175C (350 farenheit) for 10-12 minutes.  Wait for them to cool off and then enjoy!
